Pecorino al Tartufo di Grotta is made only with the sheep milk drawn only in springtime.
This extraordinary cheese is the result of long months of natural aging when the cheese is massaged and brushed and the development of aging.is personally checked by our staff’s hands and expert eyes. The obtained cheese is dry-salted and aged with oak powder for long months at constant humidity and temperature.
The colour of paste is snow-white. The perfume remembers fresh truffle milk with notes of freshly drawn milk and flavor,becoming silky and creamy even after long aging months.
